“Let food be thy medicine and medicine be thy food.”
I am Chef Natanel and I love to cook food that has soul to nurture people.
Born in an ancient town of Samarkand, Uzbekistan (a bustling cosmopolitan city, rich with intertwined cultures post World War 2), I watched my mother cook every meal with love and passion. I used to walk the city's rich bazaars with my father, hand-picking each ingredient for my mothers meals. The imprint of these first experiences, helping my mother in the kitchen, established a foundation for a life long journey involving cuisine.
In my youth I traveled extensively and learned the intricacies of world renowned and favored kitchens - from the diverse republics of the Soviet Union, to the Middle East, Europe, Asia and the Americas.
I finally came in NYC and owned and operated an Organic Market Shop and Cafe. The experience of Wellness has significantly enhanced my approach to food. I realized that nothing comes closer to a great meal than farm-to-table and that knowing where our food comes from, who grew it and how - makes the ultimate difference. Let food be thy medicine - proclaimed a great thinker.
This shift in perspective led me to settle in the Hudson Valley - a flourishing hub of farms, perma-culture, arts and transplants from all over the world, with a main thing in common - the love for the earth and progress.
To make a memorable meal a number of things must come together - the fresh ingredients, a sense of timing and measurement, the right tools, but above all - passion and mood of the chef.
Food to me is art. It is entertainment. It is the texture and the color, the palette of scents and the exalted experience of the first bite.
